Grilled Beer Can Chicken Recipe

Our Grilled Beer Can Chicken recipe is an easy recipe to make on the grill. We have our recommended marinade below, but you can really season your chicken however you want.

Ingredients:

1 tablespoon extra virgin olive oil
1 tablespoon lime juice
1 teaspoon chipotle chili powder
1 teaspoon Kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/3 teaspoon fresh ground black pepper
1 whole chicken (4.5 pounds)
1 12-ounce beer can

Directions:

1. In a medium sized bowl, whisk olive oil, lime juice, chipotle chili powder, salt, oregano, cumin and black pepper.
2. Make sure everything is removed from the cavity of the chicken and pat dry.
3. Carefully run your fingers beneath the skin of the chicken to loosen and create air pockets.
4. Spoon some of the marinade under the skin and rub into the breast meat and thighs.
5. Cover the outside of the chicken with the remaining marinade.
6. Prepare the grill for indirect cooking over medium heat (350-450F).
7. Pour out 6-oz. beer (it’s best to consume it vs. throwing it down the drain!)
8. With a church key style can opener, make two more slits in the top of the beer can.
9. On a sturdy surface, place the chicken over the beer can and put it upright on the grill over indirect heat.
10. Cooking time will be between 1.25 to 1.5 hours. (It is done when a temperature of 165F is reached in the thickest part of the breast, or 180F in the thigh.)
11. Let the chicken rest on the can for 10-15 minutes, then carefully remove the can.

Pinot Grigio Wine

This Grilled Beer Can Chicken recipe goes great with a beer, but can also be paired with wine. I typically like white zinfandels with this type of dish, but I think it would be too sweet and take away from the beer infusion. I would pair this dish with a Pinot Grigio. The lime and lemon notes of the wine would pair well with the grill and beer flavors. A Pinot Grigio is also a medium to full-bodied wine, with a rather low acidity and fairly neutral aromas.
