Cajun cuisine originated in Louisiana and is a mix of French, Canadian, African and Native American influences. Most Cajun recipes start with the ‘Holy Trinity’ which is a mix of onion, celery and bell pepper. From there you often see garlic, paprika, thyme, parsley and green onion in Cajun dishes.
When the Cajuns settled in South Louisiana, they were forced to live off of the land and be resourceful with their ingredients. This is one reason why Cajun dishes generally do not involve exotic or expensive ingredients. They are simple dishes that were created out of necessity. Most of the primary ingredients will be fish, pork, chicken, turkey or shrimp and will be boiled, grilled, stewed, deep fried or smoked.
