
Spring Vegetable Carbonara Recipe
This Spring Vegetable Carbonara recipe is a vegetarian dish that uses asparagus and peas. The dish is nice and light, but it is also a flavorful dish!

Ingredients:
1.5 cups frozen peas
1 pound spaghetti
2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
1/2 pound asparagus, trimmed and cut into 1/2-inch pieces
1 lemon juiced
Kosher salt
Freshly ground black pepper
2 large eggs
3/4 cup grated Parmesan, plus more for serving
1 teaspoon freshly grated lemon zest
12 basil leaves, thinly sliced, plus more for serving
Directions:
1. Bring a large pot of salted water to a boil.
2. Add peas to pot and boil for 2-minutes.
3. Using a slotted spoon, transfer peas to a small bowl.
4. Add spaghetti to boiling water and cook until al dente, (9-11 minutes).
5. Reserve 1-cup of the pasta water, then drain the pasta.
6. While pasta is cooking, heat oil in a skillet over medium heat.
7. Add garlic slices to the oil and quickly sauté (30-seconds).
8. Add the asparagus and cook until tender (3-minutes).
9. Add peas along with 1 teaspoon salt, and cook (2-minutes).
10. Turn off heat and set aside.
11. In a large bowl, whisk together the eggs with Parmesan.
12. Add drained pasta, and 1/2 cup reserved pasta water and toss.
13. Fold in asparagus and pea mixture along with lemon zest, lemon juice and basil.
14. Season pasta with 1/2 teaspoon pepper and any additional salt.
15. Top with shaved Parmesan and enjoy!
