
Slow Cooker Lemon Garlic Chicken Recipe

Ingredients:
1 tablespoon olive oil
2 lbs. boneless, skinless chicken breasts
1/2 teaspoon kosher salt, plus more for the chicken
1/4 teaspoon freshly ground black pepper, plus more for the chicken
1 cup chicken broth
2 lemons, juiced
8 cloves garlic, smashed
2 tablespoons unsalted butter, at room temperature
2 tablespoons all-purpose flour
Chopped fresh parsley leaves
Directions:
1. In a large skillet, heat oil over medium-high heat.
2. Season chicken generously with salt and pepper on both sides.
3. Place the chicken in the pan and sear the bottom for 5-minutes.
4. Transfer the chicken to slow cooker, seared side up in a single layer.
5. Add the broth, lemon juice and garlic.
6. Cover and cook on low for 4-hours.
7. In a small bowl, combine the butter and flour (using your fingers to rub the flour into the butter.)
8. Transfer the chicken to a plate, and pour the garlic and liquid from the slow cooker into a small saucepan.
9. Bring to a boil over medium-high heat.
10. Add the butter mixture and whisk constantly until it is incorporated into the sauce.
11. Cook, stirring frequently until the sauce thickens (3-4 minutes.)
12. Pour over chicken and top with parsley.
