
Cuban Chicken with Rice Recipe
Our Cuban Chicken with Rice recipe is similar to a Cuban Arroz con Pollo dish, but we exclude tomatoes from the dish. It has a lot of similarities, and is a very easy recipe to cook for a great midweek meal!

Ingredients:
2.5 lb. chicken legs and thighs
Kosher salt
Freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon olive oil
1 onion, chopped
4 cloves garlic, minced
1 yellow bell pepper
1 red bell pepper
1 teaspoon turmeric
1 teaspoon ground cumin
1 cup long-grain rice
1 3/4 cups chicken broth
1 cup peas, thawed frozen or cooked fresh
Fresh cilantro, rough chopped
Directions:
1. Preheat oven to 375F.
2. Pat the chicken dry and season both sides with salt and pepper.
3. Melt the butter and oil in a large Dutch oven over medium-high heat.
4. Fry the chicken, skin side down, and cook until browned (6-minutes.)
5. Flip the chicken and cook for an additional 2-minutes.
6. Transfer the chicken to a plate.
7. Drain all but 2 tablespoons of the oil.
8. Add the onions to the oil and cook for 3-5 minutes, until soft.
9. Add the garlic and cook for 1-minute.
10. Add the peppers and cook, 3-minutes.
11. Stir in turmeric, cumin, rice, 1/4 teaspoon salt and stir until the rice is coated.
12. Add the broth, stir and increase the heat to high to bring to a boil for 2-minutes.
13. Add the chicken back to the rice dish.
14. Cover and transfer to the oven for 25-minutes.
15. Fluff the rice and stir in the peas.
16. Cover for 5-minutes.
17. Salt and pepper, and top with cilantro.

Pinot Grigio Wine
This Cuban Chicken with Rice recipe is a nice flavorful chicken dish full of nice light flavors from the chicken and vegetables. I would pair this dish with a Pinot Grigio. The lime and lemon notes of the wine would pair well with this dish. A Pinot Grigio is also a medium to full-bodied wine, with a rather low acidity and fairly neutral aromas.
