Crispy Chicken Sandwich Recipe

With the “Chicken Sandwich Wars” we figured it was time to perfect our own crispy chicken sandwich recipe! Our chicken has a perfect crispiness, and this recipe is very easy to make. If you like crispy chicken sandwiches, this recipe is for you!

Ingredients:

1.5 pound boneless, skinless chicken breasts
1.5 cups dill pickle juice
1.5 cups milk, separated
1 egg
1.5 cups flour
2 tablespoons powdered sugar
1 tablespoon Kosher salt
1 tablespoon freshly ground black pepper
1.5 cups vegetable oil

Directions:

1. Cut the chicken into 6-ounce portions.
2. Use the flat part of a meat mallet and pound the chicken breasts until they are around 1/4″ thick.
3. In a large bowl, combine the pickle juice and 1/2 cup milk and stir.
4. Add the chicken and marinate in the refrigerator for 1-hour.
5. Drain the chicken.
6. In a large Dutch oven, heat oil over medium-high heat to 375F.
7. In a medium sized bowl, combine 1-cup milk and egg.
8. In another bowl, add the flour, powdered sugar, salt and pepper and mix well to combine.
9. Dip chicken in the flour mixture and coat well.
10. Then dip into the egg wash and re-dredge in the flour mixture.
11. Add chicken to oil and cook around 4-minutes per side. If the oil gets too hot, you can reduce to 3-3.5 minutes/ side. The color will really dictate if you have to reduce the cooking time.
12. Once done lay chicken on paper towels to cool.
13. Serve with mayonnaise, pickles, lettuce and tomato.
