Breaded Lemon Chicken Breasts Recipe

Winner, winner, chicken dinner! Our Breaded Lemon Chicken Breasts recipe is an easy dish to make with minimal ingredients. The chicken goes great over a bed of arugula!

Ingredients:

2 large boneless, skinless chicken breasts
1/3 cup lemon juice
1.5 cups seasoned breadcrumbs
Vegetable oil, to pan fry
Lemon pepper, to taste
Parsley, to garnish

Directions:

1. Slice each chicken breast in half, lengthwise.
2. Use a meat mallet and pound the halves around 1/4″ thick.
3. In a shallow bowl add the lemon juice.
4. In a separate bowl add the breadcrumbs.
5. Dip each breast, one at a time into the lemon juice and let it marinate for 2-minutes.
6. Flip the breast and marinate it for an additional 2-minutes.
7. Repeat with the other breasts.
8. Transfer the marinated breasts to the breadcrumbs and coat.
9. Set aside on a cooling rack and repeat until all chicken is breaded.
10. Add oil to a large frying pan, around 1/4″ high and heat on medium-high heat.
11. Once oil is hot, add 2 of the chicken breasts.
12. Season tops with lemon pepper.
13. Fry for 4-minutes.
14. Turn over, season with lemon pepper and fry for an additional 4-minutes.
15. Set on cooling rack while you fry the other 2 breasts.
16. Garnish with parsley and serve.
