
Citrus and Fennel Marinated Green Olives Recipe
Our Citrus and Fennel Marinated Green Olives recipe makes for a great tapas or appetizer. We use Castelvetrano olives and marinate them with orange, fennel, red pepper and rosemary. This recipe is delicious!

Ingredients:
2 cups Castelvetrano Olives
1/4 cup Extra Virgin Olive Oil
6 cloves garlic, thinly sliced
1 orange
1 teaspoon Fennel Seeds, crushed
1/2 teaspoon Red Pepper Flakes
1 sprig Rosemary, cut into 2″ sections and stems removed
Directions:
1. Remove zest of a small orange with a vegetable peeler. Cut into thin julienned strips.
2. In a small saucepan, heat oil until it starts to pop and then remove from heat.
3. Stir in garlic, orange peel, fennel seeds, red pepper flakes, rosemary and steep for 2-minutes.
4. Add olives and simmer on low heat for 2-minutes.
5. Remove from heat and let it sit at room temperature for 1-hour before serving or storing.
