Instant Pot Braised Chicken Thighs with White Beans Recipe

Our Instant Pot Braised Chicken Thighs with White Beans Recipe is a Tuscan-inspired chicken dish where the flavor is rounded out with Pancetta and rosemary. It is an easy dish to make, that will make you reminisce about being in Italy!

Ingredients:

8 bone-in chicken thighs
Kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 ounces pancetta, finely chopped
6 garlic cloves, peeled and smashed
2 cans of cannellini beans, drained
1/2 cup of water
2 sprigs fresh rosemary
1 tablespoon fresh parsley, chopped

Directions:

1. Pat chicken dry with paper towels and season with salt and pepper.
2. Using highest sauté function, heat oil until HOT or for 5-minutes.
3. Place 1/2 of chicken skin side down and cook until browned (7 minutes).
4. Transfer to plate and repeat with remaining chicken.
5. Once chicken is removed, add pancetta, garlic and 1/4 teaspoon pepper and cook for 3-minutes.
6. Stir in beans, water and rosemary sprigs.
7. Nestle chicken skin side up into the instant pot.
8. Lock the lid in place and select high pressure for 9-minutes.
9. Once done, quick release the pressure.
10. Transfer chicken to a serving dish and discard the skin.
11. Set instant pot to highest sauté setting and cook for 3-minutes.
12. Discard rosemary sprig, stir in parsley and season with pepper.
13. Drizzle beans with olive oil and serve with the cooked chicken.
