Slow Cooker Hatch Green Chile Verde Recipe

This Slow Cooker Hatch Green Chile Verde recipe combines the flavors of slow cooked pork with Salsa Verde. The pork is very tender and the Salsa Verde is tangy, adding great flavor to a flour tortilla!

Ingredients:

2 pounds tomatillos husked and rinsed
1 medium yellow onion, peeled and quartered
4 garlic cloves, peeled and smashed
4 roasted hatch chilies, stemmed
1/3 cup loosely packed cilantro
1 teaspoon Kosher salt
2 pounds pork sirloin roast
2 tablespoons olive oil
1 tablespoon butter
Kosher salt and freshly ground black pepper

Directions:

1. Preheat oven to 450.
2. Spray a baking sheet and place the tomatillos, chilies, quartered onion and garlic cloves on baking sheet and roast for 20-minutes (flip the vegetables half-way through cooking time.)
3. Transfer the roasted vegetables to food processor or blender and blend until almost smooth.
4. Add cilantro and salt and blend a few more times and set aside.
5. Cut the pork roast into 1.5″x1″ pieces and season with salt and pepper.
6. Heat a large skillet over medium high heat adding 1 tablespoon olive oil and butter. Transfer half of the pork to the skillet and brown all sides (about 4-minutes on each side.) Transfer pork to slow cooker and finish browning remaining pork.
7. When done, add pork to slow cooker and pour the salsa verde over the top. Cook on low 8-10 hours or on high for 4-5 hours.
