Instant Pot Pulled Pork recipe

This Instant Pot Pulled Pork recipe is very easy and flavorful. The pork comes out very tender with a nice light smoke flavor. This dish takes around 1-hour and 15 minutes, but it tastes like it was smoked for a day!

Ingredients:

4 pound pork butt (boneless or bone in)
3 tablespoons light brown sugar
2 teaspoons salt
1 teaspoon ground mustard
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1.5 cups chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon Mesquite flavored liquid smoke
2 tablespoons olive oil

Directions:

1. Trim fat from the pork and cut into 4 chunks.
2. Add all of the dry ingredients to a large bowl and mix well.
3. Add pork chunks and coat well.
4. Add olive oil to Instant Pot and set to sauté.
5. Once ready, add two pork chunks and brown all sides.
6. Once browned remove the chunks and brown the other two.
7. Once pork is browned, add 1/2 cup chicken broth.
8. Use a wooden spoon to deglaze the bottom of the pot, making sure to get all of the brown bits up.
9. Add remaining chicken broth, Worcestershire sauce and liquid smoke.
10. Place the pork into the pot, trying to space them out as much as possible.
11. Pressure cook on high for 60-minutes.
12. Let the pressure release naturally for around 20-minutes.
13. Remove the pork and shred with a fork.
14. Serve with the juices of the Instant Pot or with BBQ sauce.

Rosé

This Instant Pot Pulled Pork recipe has a nice smoke level which we like to offset with a Rosé. We feel that the pork can be a little heavy for your average white wine, and a red wine can be a bit heavy and consume the flavors of the meat.
