
Arugula Pesto Recipe
Our Arugula Pesto recipe substitutes basil for arugula. This recipe can be a great way to save aging arugula and tastes amazing on pasta dishes, crackers and even cauliflower.

Ingredients:
8 ounces Arugula
1 cup Parmesan Reggiano Cheese (finely grated)
3/4 cup Pine Nuts (toasted)
1/2 cup Extra Virgin Olive Oil
2 cloves of Garlic
1/2 lemon (juiced)
1 teaspoon Kosher Salt
1/4 teaspoon black pepper
Water (as needed)
Directions:
1. Place arugula, cheese, pine nuts, olive oil, garlic, lemon, salt and pepper in food processor.
2. Blend on high speed until smooth.
3. Add small amounts of water to reach desired consistency.
4. Store in airtight container and refrigerate (lasts up to 5-days.)
