
Baja Fish Tacos Recipe

Ingredients:
1 pound cod or mahi mahi
1.5 cups all-purpose flour
1/2 teaspoon dried Mexican oregano
1/2 teaspoon garlic powder
1 cup Tecate (or other light Mexican beer)
1.5 cups vegetable oil
1/2 cup Mexican crema
1/2 cup mayonnaise
1 teaspoon lime juice
Kosher salt
Ground black pepper
1.5 cups finely shredded cabbage
Corn tortillas
Pico de gallo
Directions:
1. Cut the fish into strips.
2. Season with salt and pepper.
3. In a dish add 1/2 cup flour.
4. Dredge the fish in the flour to coat.
5. In a large bowl, combine 1-cup flour, oregano, garlic powder, 1/2 teaspoon salt, 1/2 teaspoon pepper.
6. Add a small amount of beer to the bowl, whisking as you pour. You want the consistency to be similar to pancake batter, so add up to 1-cup of the beer.
7. In a large frying pan, heat the oil over medium-high heat.
8. Once the oil is hot, dip a few pieces of fish in the batter shaking off excess.
9. Add the fish to the oil and cook for 3-minutes (until golden brown).
10. Flip the fish and cook for an additional 2-minutes.
11. Transfer fish to a paper towel lined plate to drain.
12. Repeat with remaining fish.
13. In a small bowl stir together crema, mayonnaise and lime juice.
14. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
15. If it’s too thick, add 1-2 tablespoons of water to thin it out.
16. Top tortillas with fish, cabbage, pico de gallo and drizzle with the lime crema.
