
Brunswick Stew Recipe
Brunswick Stew is a classic Southern stew that features fresh game and smoked meat along with vegetables. Ingredients:
1 tablespoon oil oil
1 large onion, diced
2 carrots, peeled and thinly sliced into discs
2 celery stalks, diced
1.5 teaspoons kosher salt, divided
1/2 teaspoon ground pepper
4 cloves garlic, peeled and sliced
1/2 teaspoon dried thyme
1/4 teaspoon crushed red pepper
2 tablespoons tomato paste
1 (15 ounce) can unsalted diced tomatoes
4 cups unsalted chicken broth
1 bay leaf
1 pound Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
1 can corn kernels
2 cups frozen lima beans
2 cups sliced okra, fresh or frozen
1 smoked turkey drumstick (about 1 pound)
1/3 cup Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons light brown sugar
Directions:
1. Heat olive oil in a large pot over medium heat.
2. When oil is hot, add the onions, carrots, celery, 1/2 teaspoon salt, pepper and sauté 3-minutes.
3. Add in the garlic, thyme and crushed red peppers and sauté 1-minute longer.
4. Add tomatoes, broth, bay leaf and bring to a boil over high heat.
5. Once boiling, stir in the potatoes, corn, lima beans, okra and turkey.
6. Return to a boil, then reduce the heat uncovered for 20-minutes.
7. Stir in Worcestershire, vinegar, brown sugar and 1 teaspoon salt.
8. Simmer for 10-minutes.
9. Keep the stew simmering and transfer the turkey leg to a cutting board and allow it to cool for 10-minutes.
10. Dice the turkey meat, discarding the unedibles and return it to the stew.
