Chicken and Bacon Orzo Soup Recipe

This Chicken and Bacon Orzo Soup recipe is a wonderful tasting dish for a cold winter’s day. The addition of the bacon and the use of orzo is a nice take on a classic chicken soup.

Ingredients:

6 slices bacon
1 large onion, diced
2 cloves garlic minced
3 celery ribs, diced
1 cup carrots, diced
1 pound boneless skinless chicken breast
6 cups chicken stock
1/2 cup orzo
1.5 teaspoons kosher salt
3/4 teaspoon fresh ground black pepper
Chopped fresh parsley to taste

Directions:

1. In a frying pan, cook the bacon until crisp.
2. Once cooked, lay bacon on a plate lined with paper towels.
3. Add 2.5 tablespoons bacon grease to a Dutch oven.
4. Heat the grease over high heat, until it start to shimmer.
5. Add onions, celery and carrots and lower to medium heat.
6. Stir to combine, then add a pinch of salt and garlic and caramelize the mixture.
7. Lay the chicken breasts on top of the vegetable mixture and cover with chicken stock.
8. Top Dutch oven with lid, and bring to a boil.
9. Once boiling, reduce the heat to low and simmer for 20-minutes.
10. Remove the chicken, and allow it to cool.
11. Once cooled, use 2 forks to shred the meat, and set aside.
12. Bring the soup back to a boil and add the orzo, and stir.
13. Cook orzo uncovered for 8-minutes.
14. Add the chicken back to the soup and season with salt and pepper.
15. Crumble cooked bacon into the soup and add parsley.
