
Creamed Spinach Dip Recipe
This recipe was actually the result of a failed attempt at making creamed spinach. My proportions were off, but the result was a recipe that would be FIRE at your next party! Our Creamed Spinach Dip recipe is so good, it’s literally a must try. Serve with pita chips, bread, etc.

Ingredients:
4 tablespoons unsalted butter
1 medium onion, minced
4 cloves garlic, minced
2 teaspoons Kosher salt
1 teaspoon coarse ground black pepper
1/2 teaspoon nutmeg
1/4 cup flour
3.5 cups half-and-half
1 to 1.5 lb. frozen spinach
1 cup mozzarella cheese
4 ounces cream cheese
1/2 cup Parmesan cheese, grated
Directions:
1. Cook the spinach according to the package’s directions.
2. Drain the spinach in a strainer or colander.
3. Rinse with cold water until cool and squeeze the water out of each fistful of spinach.
4. In a large saucepan melt the butter with the garlic and onions.
5. Cook on medium low for 8-10 minutes or until the onions are translucent.
6. Add the kosher salt, black pepper and nutmeg.
7. Add in the flour and mix with a wooden spoon over low.
8. Cook for 2-3 minutes until the aroma is a bit nutty.
9. Add the half-and-half and cook until boiling.
10. Add in the mozzarella and cream cheese.
11. Cook for 6-8 minutes or until the mixture has thickened.
12. Add in the spinach and the Parmesan cheese and stir to combine.
