
Creamy Mustard Chicken Thighs Recipe

Ingredients:
1-pound boneless, skinless chicken thighs, trimmed
1/2 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons extra-virgin olive oil, divided
1 medium yellow onion, thinly sliced
1/4 cup dry white wine
1 tablespoon Dijon mustard
1/4 cup heavy cream
1 tablespoon capers
Chopped fresh parsley for garnish
Directions:
1. Season the chicken thighs with salt and pepper.
2. Heat 1 tablespoon oil in a Dutch oven over medium-high heat.
3. Once oil is shimmering, add the chicken and cook until browned (3-minutes per side).
4. Transfer to a clean plate.
5. Add the remaining 1 tablespoon oil and onion to the pan.
6. Cover and cook, stirring occasionally, until golden (3 minutes).
7. Stir in wine and mustard, scraping up any browned bits.
8. Reduce heat to maintain a simmer.
9. Stir in cream and capers.
10. Return the chicken and any accumulated juices to the pan.
11. Cover and simmer for 4 minutes.
12. Serve topped with fresh parsley.
