
Enchiladas Suizas Recipe
Suizas is a creamy sauce that is usually made with tomatillos, onions, cilantro and green peppers. Our Enchiladas Suizas Recipe combines these ingredients to make a creamy light tasting sauce that pairs well with the chicken.

Ingredients:
8 tomatillos
2 serrano peppers
1/4 white onion
1 garlic clove
1/2 cup Mexican crema
1/2 cup chopped fresh cilantro
12 corn tortillas
Vegetable Oil
2 cups shredded cooked chicken
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1 cup shredded Oaxaca cheese
Directions:
Salsa Verde
1. In a large saucepan, bring tomatillos, serranos, white onion, garlic and 4 cups water to a boil.
2. Reduce heat and simmer for 15-minutes (until tomatillos are tender.)
3. Transfer the vegetables and 1-cup cooking liquid to a blender or food processor.
4. Add crema and cilantro and blend until pureed.
Enchiladas
1. In a large skillet, heat 2 tablespoons vegetable oil over medium heat.
2. Using tongs, dip tortillas (one at a time) into the oil for a few seconds per side (add more oil as needed.)
3. Transfer finished tortillas to a paper towel lined plate to drain.
4. Season chicken with onion powder, garlic powder, salt and pepper.
5. Preheat oven to 350F.
6. Grease a 13×9 baking dish.
7. Fill the center of each tortilla with chicken, roll it up and arrange in a baking dish, seam side down.
8. Cover enchiladas with the rest of the salsa Verde and sprinkle with cheese.
9. Bake 25-30 minutes until the cheese starts to turn golden brown.
10. A few garnish ideas- red onion, cilantro, jalapenos, crema.
