Instant Pot Braised Sausage with Lentils and Kale Recipe

Our Instant Pot Braised Sausage with Lentils and Kale Recipe is an easy recipe to make in the Instant Pot. You simply brown the sausage, add the lentils and sauté the kale. This is an easy mid-week recipe!

Ingredients:

1 tablespoon extra-virgin olive oil
1.5 pounds Italian sausage (either hot or sweet)
2 shallots, peeled, halved and sliced thin
4 garlic cloves, minced
1/4 teaspoon dried thyme
1 cup chicken broth
1 cup water
1 cup French green lentils (French green lentils hold up better than brown or green lentils)
2 tablespoons whole-grain mustard
Freshly ground black pepper
12 ounces kale, stemmed and coarsely chopped

Directions:

1. Add oil and set the Instant Pot to sauté and wait for the HOT message or just 5-minutes.
2. Brown sausage on all sides and transfer to a plate.
3. Add shallots and cook for 1-minute.
4. Stir in garlic, thyme and cook until fragrant (30-seconds).
5. Stir in broth, water, lentils, mustard and 1/4 teaspoon pepper.
6. Nestle sausages into the pot along with any accumulated juices.
7. Lock lid and cook on high pressure for 25-minutes.
8. Once done, quick release the steam.
9. Transfer sausages to a serving dish and tent with foil.
10. Stir kale into the pot, one handful at a time.
11. Cook using the highest sauté setting for 3-minutes.
12. Season with salt and pepper to taste and serve with the cooked Italian sausages.
