Instant Pot Pork Chili Verde Recipe

Ingredients:

1 tablespoon olive oil
1-pound boneless pork loin, cut into 1″ pieces
1 onion, halved and thinly sliced
1-pound tomatillos, husks removed, rinsed and coarsely chopped
6 garlic cloves, minced
1 teaspoon ground cumin
1 can Great Northern beans, drained
1 can diced green chiles (4 ounces)
1 teaspoon salt
1/4 teaspoon ground black pepper
1 bunch chopped fresh cilantro
Tortilla chips (optional)
Shredded cheese (optional)
Sour Cream (optional)


Directions:

1. Add oil to the Instant Pot and press sauté.
2. Once hot, add pork and brown (6-minutes).
3. Once done, remove pork and set aside.
4. Add onion to the pot and sauté until softened (3-minutes).
5. Add tomatillos, garlic and cumin and sauté for 3-minutes (scraping up any browned bits from the bottom of the pot.)
6. Stir in beans, chiles, salt, pepper and pork and mix.
7. Secure lid, set the high pressure cook timer to 8-minutes.
8. When cooking is complete, use a natural release for 10-minutes.
9. After 10-minutes, release the remaining pressure.
10. Remove lid and stir in cilantro.
11. You can top with tortilla chips, shredded cheese or sour cream.
