
Instant Pot White Chicken Chili Recipe
Our Instant Pot White Chicken Chili recipe is a light chili dish, which is perfect on a chilly day! The stew is thick enough to stick to your ribs, but doesn’t use anything that is tomato based, which keeps it fairly fresh!

Ingredients:
1 tablespoon olive oil
1.5 pounds whole boneless skinless chicken breasts
2 medium onions, chopped
1 4-ounce can diced green chiles
1 tablespoon minced garlic
2 teaspoons ground cumin
1 teaspoon Kosher salt
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1.5 cups chicken broth
2 cans Great Northern beans, drained
Chopped cilantro
Juice of 1 lime
Jalapeno or serrano peppers
Shredded cheese
Directions:
1. Press sauté and add oil to Instant Pot.
2. Once hot, add chicken and sear for 3-minutes per side (6-minutes total).
3. Remove chicken and place aside.
4. Add onions and chilies and sauté for 3-minutes.
5. Add garlic, cumin, salt, oregano, black pepper and red pepper and sauté for 1-minute.
6. Stir in broth and use a wooden spatula to scrape up any brown bits from the bottom.
7. Stir in the beans.
8. Return chicken to the pot and lightly press it into the liquid.
9. Secure lid and set pressure to HIGH for 7-minutes.
10. When cooking is complete, use the quick release.
11. Remove chicken and shred.
12. Return chicken to pot and sauté for 3-minutes (this will help to thicken the chili.)
13. Juice lime and stir.
14. Top with cilantro.
15. Optional- you can also top with cheese, peppers, etc.
