Lemon Garlic Rosemary Roasted Chicken Recipe

Our Lemon Garlic Rosemary Roasted Chicken recipe is an easy recipe to make. The flavors of the lemon, garlic and fresh rosemary penetrate the meat of the chicken, resulting in a delicious and aromatic dish.

Ingredients:

1 whole chicken (3-5 pounds)
2 tablespoons kosher salt
Freshly cracked black pepper
4 rosemary sprigs
2 heads of garlic, halved
3 lemons, halved
3 tablespoons extra-virgin olive oil

Directions:

1. Let chicken sit at room temperature (30-minutes to 1-hour prior to cooking.)
2. Preheat the oven to 425F.
3. In a small bowl mix the salt and pepper.
4. Pat chicken dry with paper towels and pour 1/2 of the salt and pepper into the chicken cavity.
5. Place rosemary, 2 garlic halves and 2 lemons inside of the chicken.
6. Place chicken in a cast iron skillet, Dutch oven or a small roasting pan.
7. Pour the oil onto the chicken and evenly coat it with your hands.
8. Sprinkle the rest of the salt and pepper over the chicken.
9. Place any extra lemons or garlic around the chicken.
10. Cook for 1-hour to 1-hour and 20-minutes (until chicken reaches 165F.)
11. When the chicken is done, remove it from the oven and lightly tent it with foil for 10-minutes.
