Miso Ginger Chicken Soup Recipe

Our Miso Ginger Chicken Soup recipe is an Asian inspired chicken soup. The recipe uses Udon noodles along with miso paste and freshly grated ginger, to give it unique flavors.

Ingredients:

1/2 yellow onion, diced
6 garlic cloves, minced
1 tablespoon ginger, freshly grated
1/4 cup white or yellow miso paste If you cannot find miso paste, soy sauce can be substituted.
1 tablespoon vegetable oil
4 carrots, chopped
3 cups shredded chicken, cooked
8 cups chicken broth
12 oz. fresh Udon noodles
1 bunch sliced scallions, white and green parts separated
salt and pepper to taste

Directions:

1. Heat oil in a Dutch oven over medium heat.
2. Add the white and light green parts of the scallions, along with chopped onions and carrots and sauté for 2-minutes.
3. Add the garlic, ginger and miso paste and sauté for 2-minutes.
4. Add the broth and bring to a boil.
5. Add the Udon noodles and turn on low, cook uncovered for 13-minutes.
6. Turn off the heat, add the chicken and sliced green onions.
7. Stir to combine and season with salt and pepper to taste.
