Ingredients:

2 tablespoons extra virgin olive oil
1-pound cubed ham
1-pound smoked sausage, sliced
1 cup diced onions
1/2 cup diced celery
1/2 cup diced bell peppers
1 tablespoon minced garlic
1 medium head cabbage, chopped
1 (14.5-ounce) can stewed tomatoes
1 (15.8-ounce) can black-eyed peas
1 cup uncooked white long grain rice
1 cup water
Creole seasoning to taste
salt and pepper to taste

Directions:

1. In a Dutch oven heat oil over medium-high heat.
2. Add ham, sausage, onions, celery, bell peppers and garlic.
3. Sauté until ham and sausage are browned (5-10 minutes).
4. Add cabbage, tomatoes, black-eyed peas, rice and water.
5. Stir until well combined.
6. Season with Creole seasoning, salt and pepper.
7. Cover and cook, stirring occasionally for 35-40 minutes until rice is tender.
