Ingredients:
3.5 ounces goat cheese
1 tablespoon chives, minced
1 tablespoon mint, minced
1 tablespoon lemon juice
Pinch red pepper flakes
Kosher salt
Freshly ground black pepper
3 medium red peppers- roasted, peeled and deseeded
Directions:
1. In a small bowl, combine the goat cheese, chives, mint, lemon juice, red pepper flakes, salt and pepper.
2. Cut each red pepper into quarters.
3. Place approximately 1 teaspoon of the goat cheese mixture into each segment and roll the pepper strip.
4. Refrigerate the rolled-up peppers for a few hours. This will allow the peppers to set.
5. Cut each rolled-up pepper.
6. Optional- you can garnish with extra mint and chives.
