Slow Cooker Asian Short Ribs Recipe

This Slow Cooker Asian Short Ribs Recipe is easy to make and produces a lot of flavor. This dish can be served over rice and garnished with cilantro and red cabbage to add color and flavor to the dish.

Ingredients:

4 pounds beef short ribs, cut into 3-4 inch pieces
1/2 teaspoon Kosher salt
1 tablespoon safflower oil
3 tablespoons soy sauce
3 tablespoons brown sugar
3 tablespoons gochujang
2 tablespoons rice wine vinegar
2 tablespoons finely diced and peeled fresh ginger
4 cloves garlic, minced
1 cup water
1 cup cilantro, roughly chopped
1 tablespoon sesame seeds
1 thinly sliced serrano pepper, divided
Red cabbage for garnish

Directions:

1. Season short ribs with Kosher salt.
2. Heat safflower oil in a large skillet over medium-high heat.
3. Add ribs and brown all sides (around 10-minutes.)
4. Transfer short ribs to slow cooker.
5. In a small bowl, whisk together soy sauce, brown sugar, gochujang, rice wine vinegar, ginger, garlic, half of the serrano and water.
6. Pour mixture over short ribs, cover and cook on low for 8-hours.
7. Once the ribs are done, the bones should fall off. Remove the bones and place on a platter.
8. Pour liquid from slow cooker to a glass measuring cup and let it sit until the fat rises (2-3 minutes.)
9. Skim off the fat; then pour mixture over the ribs.
10. Garnish with red cabbage, cilantro, sesame seeds and remaining serrano pepper.
11. Serve over rice, by itself or even in tortillas!
