Slow Cooker Pot Roast with Mushroom Gravy Recipe

Ingredients:

1 large beef Chuck Roast
Kosher salt
Freshly ground black pepper
2 tablespoons vegetable oil
1 onion, chopped
1/4 cup all-purpose flour
1 tablespoon tomato paste
1/4 teaspoon dried thyme
1/2 cup dry red wine
1 cup beef broth
1-pound mushrooms, thinly sliced (we used baby bellas, but you can use any)
2 Bay leaves
Fresh parsley, chopped

Directions:

1. Pat the beef dry with towels and season with salt and pepper.
2. In a Dutch oven over medium high heat, heat the oil.
3. Once the oil starts to pop and shimmer, brown the roast on all side (8-10 minutes).
4. Transfer the meat to a plate to rest.
5. Add onion to the pan and cook until softened (3-5 minutes).
6. Stir in flour, tomato paste and thyme and cook until fragrant (1-minute).
7. Slowly whisk in wine, scraping up any browned bits and smoothing out any lumps.
8. Stir in broth, mushrooms and bay leaves.
9. Transfer mixture to slow cooker.
10. Nestle the meat in the slow cooker along with any accumulated juices.
11. Cook on low (7-8 hours).
12. Transfer roast to a cutting board and tent with foil.
13. Transfer liquid mixture to a large pot and reduce until your desired thickness.
14. Cut roast into 1/2-inch thick slices and drizzle with 1 cup of the gravy.
15. Top with parsley and use the reserved gravy for extra sauce if needed.
