Spaghetti with Clams Recipe

Our Spaghetti with Clams recipe is an easy dish that uses canned clams. The breadcrumbs give this dish nice texture and flavor. We have often run across bland clam spaghettis, but this is not one of them!

Ingredients:

6 tablespoons olive oil
1/2 cup Italian breadcrumbs
1/2 teaspoon granulated garlic
Kosher salt
Freshly ground black pepper
1 lb. spaghetti
2 garlic cloves, thinly sliced
Pinch of crushed red pepper flakes
1/4 cup dry white wine
2 6.5 oz. cans minced clams, with liquid
1 bunch chopped fresh parsley

Directions:

1. In a medium skillet over medium heat, heat 3 tablespoons olive oil.
2. Add the breadcrumbs, granulated garlic and a pinch of salt and pepper.
3. Toast the breadcrumbs, stirring occasionally, until golden brown (3-4 minutes).
4. Once done, set aside.
5. Cook the spaghetti to al dente following the packages directions (typically 6-8 minutes).
6. Meanwhile in a large sauté pan, add the remaining 3 tablespoons olive oil along with garlic and red pepper flakes.
7. Turn the heat on low and cook until fragrant (2-minutes).
8. Stir in the wine and cook an additional 2-minutes.
9. Add the clams, raise the heat to medium and bring to a simmer.
10. Season the mixture with salt and pepper.
11. Using tongs, take the pasta out of the water and it to the saute pan.
12. Use tongs to toss (if dry use some of the reserved pasta water to moisten it.)
13. Add the parsley and toss until the noodles are coated and tender.
14. Serve with toasted breadcrumbs sprinkled on top.

Pinot Grigio Wine

This Spaghetti with Clams recipe is a nice flavorful light pasta dish. I would pair this dish with a Pinot Grigio. The lime and lemon notes of the wine would pair well with the breadcrumb topped pasta. A Pinot Grigio is also a medium to full-bodied wine, with a rather low acidity and fairly neutral aromas.
