Tinola is a Filipino ginger-garlic chicken soup that is served as an appetizer or as an entrée over rice. The traditional soup calls for malunggay leaves and green papaya, but our Tinola recipe has substitutes to ensure that everyone can enjoy this flavorful soup!

Ingredients:

3 tablespoons olive oil
1/2 cup chopped yellow onion
1/4 cup thinly sliced fresh ginger
6 cloves garlic, minced
1 pound boneless, skinless chicken thighs, trimmed and cut into 1/2-inch pieces
4 cups chicken broth
1.5 cups peeled and cubed green papaya or you can substitute chayote
2 cups chopped malunggay leaves or you can substitute bok choy leaves
1 tablespoon fish sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Directions:

1. Heat oil in a large pot over medium heat.
2. Once oil begins shimmering, add onion, ginger and garlic.
3. Sauté for until onions begin to turn translucent (3-minutes.)
4. Add chicken and broth, stir and cook until chicken is cooked through (5-minutes).
5. Add papaya (or chayote), malunggay (or bok choy), fish sauce, salt, pepper.
6. Simmer until vegetables are tender (5-minutes).
7. You can serve as a soup or over Jasmine rice.
