Shrimp Enchiladas Recipe

Our Shrimp Enchiladas recipe uses flour tortillas versus the traditional corn. The enchiladas are easy to put together and the recipe produces a delicious entrée!

Ingredients:

For the Filling:
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 onion, diced
1 red bell pepper, chopped
1 jalapeno, seed removed and minced
1 lb. shrimp, peeled and deveined
Kosher salt
Freshly ground black pepper

For the Cream Sauce:

4 tablespoons butter
4 tablespoons all-purposes flour
1.5 cup milk
1/2 cup sour cream
1 4.5 oz. can green chilis
1 teaspoon cumin
Kosher salt
Freshly ground black pepper

Assembly and Garnish

8 medium flour tortillas
1.5 cup shredded Monterey Jack
Freshly chopped cilantro
Pico de gallo

Directions:

1. Heat olive oil in a large skillet over medium heat.
2. Add garlic and cook until fragrant (around 1-minute.)
3. Add onion, bell pepper and jalapeno and cook until soft (around 7-minutes.)
4. Add shrimp and season with salt and pepper.
5. Cook until the shrimp are pink and cooked through (around 5-minutes.)
6. In a medium sized saucepan, melt butter over medium heat.
7. Whisk in flour and cook until fragrant (around 1-minute.)
8. Whisk in sour cream and milk, stir until smooth.
9. Add green chilis, cumin and season with salt and pepper.
10. Simmer until thickened (around 5-minutes.)
11. Spread a thin layer of the sauce into a 9″x13″ baking pan.
12. Spoon around 1/3 cup of the shrimp mixture into the middle of a tortilla, then sprinkle with cheese.
13. Roll tortilla and place it seam side down in the baking pan.
14. Repeat with remaining tortillas.
15. Pour remaining sauce over enchiladas and top with remaining cheese.
16. Bake in a 400-degree oven until the cheese is melted and bubble (around 25-minutes.)
17. Garnish with cilantro and serve with fresh Pico de Gallo.
