Crab Louie Salad Recipe

This Crab Louie Salad recipe combines the crunchiness of the Iceberg lettuce with the smooth flavors of the crab meat. Crab Louie salad, also known as Crab Louis salad, is the King of Salads! The recipe dates back to the early 1900’s and originated on the West Coast where Dungeness crabs are the star of the show in this wonderful dish.

Ingredients:

1 cup mayonnaise
1⁄4 cup ketchup
1⁄4 cup sweet pickle relish
2 tbsp chopped black olives
1 small white onion, peeled and minced
Salt and freshly ground black pepper
1 head iceberg lettuce
Meat from 2 cooked 2-lb. Dungeness crabs
1 lemon quartered

Directions:

1. Mix together mayonnaise, ketchup, sweet pickle relish, olives and onions in a small bowl.
2. Season with salt and pepper to taste.
3. Refrigerate dressing until ready to use.
4. Core, wash and dry lettuce, then slice into shreds.
5. Place in a bowl and toss with 1-cup dressing.
6. Divide lettuce among 4 plates, placing 1 cup crabmeat over lettuce on each plate.
7. Spoon a bit of remaining dressing over crabmeat.
8. Serve with lemon wedges and hot sauce if desired.
*The Crab Louie Salad tastes great with the quartered lemon juiced over the crabmeat.
