
Sesame Lemon Sweet Pickles Recipe
This Sesame Lemon Sweet Pickles Recipe is an easy recipe to make. The pickles aren’t overly sweet and have a nice balance between the sweetness, tanginess and a hint of spice. I typically am not a sweet pickles fan, but this one goes great with BBQ!

Ingredients:
1 lb. English hothouse cucumber, sliced 1/2-inch thick
1/2 lemon, thinly sliced into rounds with seeds removed
1 small Serrano Chile, thinly sliced
1 2-inch piece ginger, peeled and julienned
1.5 cups unseasoned rice vinegar
1/4 cup sugar
2 teaspoons Kosher salt
1 tablespoon sesame seeds
2 cups water
Equipment:
1 quart glass jar with lid
Directions:
1. Place sliced cucumbers in jar.
2. In a small saucepan over high heat, add lemon slices, Chile, ginger, vinegar, sugar, salt, sesame seeds and water.
3. Bring to a boil and cook for 1-minute.
4. Pour brine over pickles and allow flavors to meld for 4-24 hours before eating.
**Pickles can last around 2-months, keep chilled.
