Pan Seared Sesame Crusted Tuna Recipe

This pan seared sesame crusted tuna recipe is more about the technique than the actual ingredients. The technique will ensure that your tuna stays rare in the middle, while keeping a nice flavor with the soy sauce marinade.

Ingredients:

4 ahi tuna steaks, 6 ounces and approximately 1″ thick
3/4 cup white sesame seeds (If you want to do white and black sesame seeds, 1/2 cup white sesame seeds and 1/4 cup black sesame seeds)
1/2 cup soy sauce
Olive Oil

Directions:

1. Mix soy sauce with 1/4 cup olive oil in regular sized bowl.
2. Marinade the tuna steaks for 3 minutes per side.
3. Dredge tuna steaks in sesame seeds.
4. In a searing pan, add 2 tablespoons olive oil and heat on high until it smokes.
5. Add tuna steaks, make sure that you do not overcrowd the pan.
6. Watch the sides of the tuna steak. Once the white sesame seeds turn brown and the tuna steak whitens around 1/4th of the way up, flip the tuna (usually around 1-minute.)
7. Cook the other side until you see it whiten around 1/4th of the way up (around 1-minute.)
8. Cut into 1/4″ thick slices and serve immediately.
