Brazilian BBQ Steak Recipe

I have been fortunate enough to have had Brazilian friends who got me hooked on Brazilian BBQ. When you search online for recipes you will find overly complex seasoning which goes against the simplicity of Brazilian BBQ. The traditional cut of meat used is the Picanha, which is a top sirloin cap. If you can’t get a Picanha/ top sirloin cap, you can use top sirloin steaks as long as it has a fat cap on one side. Our Brazilian BBQ Steak Recipe is VERY easy to make, and you will be hooked much like I am!

Ingredients:

Picanha steak (cut into 1-1.5″ thick steaks)
Rock salt

Directions:

1. Fold each steak into a ‘C’ shape with the fat on the outside.
2. Slide a metal skewer through the steak and repeat with additional steaks.
3. Cover both sides of the meat with rock salt and allow to sit for 25-minutes.
4. Heat grill to 450-550 F.
5. Brush the rock salt off of the meat.
6. Follow the grill guide below for the proper cooking time. You will want to turn the meat 4-times within the cooking window below.
7. Once the steak is off the grill, let it rest for 5-10 minutes.
8. Cut into thin strips and serve.

Grill Guide:

1-inch steaks

Rare- 5-6 minutes (120F)
Medium Rare- 6-8 minutes (130F)
Medium- 8-9 minutes (140F)
Medium Well- 9-10 minutes (150F)
Well Done- 10-12 minutes (155F)

1 1/4-inch steaks

Rare- 7-8 minutes (120F)
Medium Rare- 8-9 minutes (130F)
Medium- 9-10 minutes (140F)
Medium Well- 10-11 minutes (150F)
Well Done- 11-12 minutes (155F)

1 1/2-inch steaks

Rare- 8-12 minutes (120F)
Medium Rare- 10-14 minutes (130F)
Medium- 15-19 minutes (140F)
Medium Well- 17-21 minutes (150F)
Well Done- 22-26 minutes (155F)
