Cabbage Soup Recipe

Our Cabbage Soup recipe is an easy recipe to make on a cold day. The soup has a hint of sweetness that pairs well with the smoke sausage.

Ingredients:

2 tablespoons olive oil
1 green cabbage, cored, halved and cut into 3″ pieces
3 carrots, peeled and cut into discs
3 celery stalks, diced
1 onion, diced
1 bell pepper, deseeded and diced
4 cloves garlic, minced
1 bag of frozen green beans
1 can (14.5 oz) petite fire roasted diced tomatoes
5 cups chicken broth
1 tablespoon Italian seasoning
1 lb. smoked sausage, cut into slices
1 bunch of Italian parsley, chopped
Kosher salt
Freshly ground black pepper

Directions:

1. Heat olive oil in a large pot over medium-high heat.
2. When oil is hot, add the onions, carrots, bell pepper and celery then sauté 6-minutes.
3. Add in the garlic and sauté 1-minute longer.
4. Stir in cabbage, tomatoes, green beans, broth, Italian seasoning, sausage and season with salt and pepper to taste.
5. Bring the mixture to a boil then reduce heat to medium-low, cover and simmer until vegetables are tender, about 15-minutes.
6. Stir in parsley and serve warm.
