
Chicken Noodle Soup Recipe
This Chicken Noodle Soup Recipe is an easy to make recipe that doesn’t require a lot of time. It is the perfect recipe for a rainy, sick or a cold winter day!

Ingredients:
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 medium carrots, cut into 1/2″ slices
2 celery ribs, halved lengthwise and cut into 1/2″ slices
4 fresh sprigs of thyme
1 bay leaf
2 quarts chicken stock
8 ounces dried wide egg noodles
1.5 cups shredded cooked chicken
Kosher Salt and freshly ground black pepper
1 handful of freshly chopped flat leaf parsley
Directions:
1. Heat olive oil in a soup pot over medium-high heat.
2. Add the onions, garlic, carrots, celery, thyme and bay leaf.
3. Sauté for around 6-minutes. You want the vegetables soft, but not browned.
4. Pour in the chicken stock and bring to a boil.
5. Add the noodles and boil for 6-8 minutes.
6. Fold in the shredded chicken, salt and pepper.
7. Let it simmer for around 10-minutes and add the parsley at the end.
