
Broccoli Soup Recipe
This Broccoli Soup recipe is very easy to make. You will want to use a stick blender, as it easily purees the vegetable mixture. If you do not have an immersion blender, you can use a regular blender to puree.

Ingredients:
4 tablespoons butter
1.5 pounds fresh broccoli, chopped
1 large onion, chopped
2 carrots, peeled and chopped
3 tablespoons all purpose flour
4 cups chicken broth
1/2 cup cream
Kosher salt
Fresh ground black pepper
Directions:
1. Melt butter in a Dutch oven over medium-high heat.
2. Add broccoli, onion, carrots and sauté until translucent (6-minutes.)
3. Add flour and cook for 1-minute.
4. Add stock and bring to a boil.
5. Simmer uncovered for 15-minutes.
6. Pour in cream and puree with stick blender.
7. Season with salt and pepper.
**Serve with croutons and cheddar cheese.
