Ingredients:

2 tablespoons vegetable oil.
2 cups diced onions
2 tablespoons minced garlic
4 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1/2 teaspoon Cayenne pepper
2 pounds ground turkey
2 15-oz. cans red kidney beans
1 28-oz. can diced tomatoes
1 6-oz. can tomato paste
6 oz. water
salt

Directions:

1. Heat oil in a large pot on medium.
2. When oil is hot, add onions, garlic, chili powder, cumin, coriander, pepper flakes, oregano and cayenne.
3. Sauté the onions in the oil until they are softened and lightly colored (about 10-minutes.)
4. Increase the heat to medium-high and add the ground turkey.
5. Add 1/4 teaspoon salt and cook the turkey until it is no longer pink (4 to 5 minutes.)
6. Add beans, tomatoes, water, tomato paste and 1/2 teaspoon salt.
7. Bring the pot to a boil, stirring to break-up the tomato paste.
8. Reduce heat to low and simmer covered for 1-hour.
9. Taste and add any additional salt or seasonings.
10. Simmer for another 30-minutes with the lid off.
11. Taste and adjust any seasonings.
