
Chicken Salbutes Recipe
Salbutes are the Yucatan’s version of a tostada. Salbutes are a deep-fried tortilla dish that has Mayan influences. The tortillas are topped with chicken, turkey, lime juice, tomatoes, lettuce, avocados and pickled red onions. Our Chicken Salbutes Recipe is traditional, but we also add cucumber to keep it nice and fresh tasting.

Ingredients:
1 medium onion, thinly sliced
1/4 cup white vinegar
1/2 teaspoon dried Mexican oregano
2.5 cups cooked shredded chicken
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 cup vegetable oil
12 corn tortillas
3 cups shredded lettuce
2 plum tomatoes, sliced
1 cucumber, peeled and sliced
1 avocado, sliced
Kosher salt
Freshly ground black pepper
Directions:
1. In a medium saucepan, boil 2 cups of water.
2. Once boiling, remove from heat and add the onion for 2-minutes.
3. Drain water and add onion to a glass bowl.
4. Add vinegar, oregano, 1/4 teaspoon Kosher salt and refrigerate.
5. Place chicken in a bowl and season with garlic powder, onion powder, 1/2 teaspoon salt, 1/4 teaspoon pepper and mix well.
6. In a large frying pan, heat oil over medium heat.
7. Once hot, fry tortillas in oil for roughly 30-seconds a side, until crisp.
8. Drain on paper towels.
9. To assemble the chicken salbutes, top tortillas with lettuce, chicken, tomatoes, cucumber pickled onions and avocado.
