Classic Borscht Recipe

Our Classic Borscht recipe is a traditional soup that originates from Eastern Europe, particularly from Ukraine, Russia, and Poland. It is a hearty, nutritious soup that typically includes beets as its main ingredient, which give the soup its characteristic deep red color.

In addition to beets, borscht may also contain other vegetables such as potatoes, carrots, onions, and cabbage. Meat, such as beef or pork, can also be added to the soup, although vegetarian versions are also common.

Borscht is typically served hot, and it is often accompanied by sour cream or yogurt. It is a popular dish in many Eastern European countries, and variations of the recipe can be found throughout the region.

Ingredients:

1 tablespoon salted butter
1 onion, diced
4 garlic cloves, minced
4 medium beets, peeled and cut into 1/2 -1 inch pieces
2 carrots, cut into rounds
1 celery stalk, diced
2 whole allspice berries
1 bay leaf
4 cups beef stock
2 tablespoons apple cider vinegar
1 teaspoon sugar
1/4 teaspoon ground black pepper
Pinch salt
Sour cream and dill, (to serve)

Directions:

1. In a large soup pot over medium-high heat, melt the butter.
2. Add onion and garlic and cook until soft (5-minutes.)
3. Add beets, carrots, celery, allspice and bay leaf, and coat with the melted butter.
4. Add the stock and bring a boil.
5. Cook vegetables for 12-minutes.
6. Remove the pot from the heat and strain the vegetables from the soup.
7. Stir in the vinegar, sugar, pepper and salt and adjust with salt and pepper if needed.
8. Optional- you can serve with a dollop of sour cream and dill. (Personally I only like it with the dill, I am not a fan of the sour cream.)
