Ginger Meatball Soup with Bok Choy Recipe

This Ginger Meatball Soup with Bok Choy recipe is light, as it’s simply vegetables, meatballs and chicken broth. This recipe serves 4 and can be complete in 30-45 minutes.

Ingredients:

1 piece fresh ginger
1 large egg
2 scallions
1 garlic clove, diced
Kosher salt
Fresh Ground Black Pepper
1/2 cup chopped fresh cilantro
1/4 cup bread crumbs
1 lb. ground turkey
6 cups chicken broth
2 red chili peppers
2 carrots
4 heads baby Bok Choy

Directions:

1. Heat broiler.
2. Line a rimmed baking sheet with aluminum foil, and spray foil to prevent sticking.
3. Grate 1-tablespoon of ginger, and thinly slice the remainder.
4. In a large bowl combine egg, scallions, garlic, grated ginger, 1/2 teaspoon salt and 1/2 teaspoon pepper.
5. Let the mixture sit for 2-minutes.
6. Add the ground turkey to the bowl and mix to combine.
7. Form the meat mixture into 1.5-inch balls and place on the baking sheet. (The recipe will yield around 20 meatballs.)
8. Broil meatballs for 8-minutes.
9. In a large saucepan bring the chicken broth, sliced ginger and chilis to a boil.
10. Add the carrots and simmer for 1-minute.
11. Add the Bok Choy and simmer for 3-minutes.
12. Add the meatballs as well as any additional salt, pepper or cilantro.
