Grilled Artichokes Recipe

This Grilled Artichokes recipe starts by steaming the artichokes, then finishing them on the grill.It does require some prep to get the artichokes ready, but this is a delicious recipe using an herb infused olive oil.

Ingredients:

1 tablespoon chopped fresh herbs (rosemary, oregano, thyme)
1/3 cup olive oil
2 garlic cloves halved (you can keep the peel on)
1 bay leaf
1 lemon, quartered
2 large artichokes
Kosher Salt

Directions:

1. Place chopped fresh herbs in a microwavable safe small bowl and cover with the olive oil.
2. Microwave on high heat for 30-seconds and place aside.
3. Fill bottom half of steamer with water, bay leaf and the cut garlic; and bring to a boil.
4. While water is warming, start prepping the artichokes by using scissors to cut away the pointy tips on the leaves.
5. Cut off the tops of the artichokes and leave about 2-inches on the base. (rub lemon over cut area to avoid browning.)
6. Cut the artichokes in half (it’s easiest to start at the base and cut towards to the top.)
7. Use a strong metal spoon to dig away the fuzzy chokes and small inner artichoke leaves. (make sure to use the lemon juice once done.)
8. Steam the artichokes cut side down for 20-minutes.
9. Once done, use a pastry brush and coat the artichokes with the herb-infused oil, and sprinkle with salt.
10. Place the artichoke halves, cut side down on the grates and grill for 5-10 minutes, until you have nice grill marks on the cut sides.
