
Roasted Artichokes Recipe
Roasted artichokes are a great way to keep the flavor of the artichoke, whereas boiling and steaming can result in lost flavor. This roasted artichokes recipe combines lemon, butter and cheese, which accentuates the flavors of the artichoke. It’s a great meal by itself, or to accompany an entrée.

Prep Time- 15 minutes
Cooking Time- 1.5 hours
Ingredients:
2 whole artichokes trimmed and halved
2 whole lemons juiced
2 cups chicken stock
6 garlic cloves, chopped
Olive oil
1/2 cup Panko Crumbs
Kosher Salt
Ground Pepper
2 tablespoons butter
4 tablespoons grated Parmesan
Directions:
1. Preheat oven to 400.
2. Peel off the bottom leaves of the artichoke and peel the stem.
3. Trim off endpoints of artichoke, kitchen shears work best, and cut the artichokes in half.
4. Use a spoon and peel out the fuzz and small interior leaves.
5. In a baking dish, add lemon juice, chicken stock and garlic.
6. Add artichokes, cut side down.
7. Drizzle exterior with olive oil and sprinkle with panko crumbs, salt and pepper.
8. Cover dish with foil and roast for 30-minutes.
9. After 30-minutes, turn artichoke halves over, sprinkle with more Panko, salt and pepper.
10. Divide 2 tablespoon of butter and 1 tablespoon of Parmesan in each half.
11. Cover with foil and roast for 15-minutes.
12. Remove foil and roast artichokes for 15 additional minutes.
13. Remove artichokes from pan.
14. Serve the sauce for the artichokes dipping sauce.
