Grilled Pollo Asado Recipe
Our Grilled Pollo Asado recipe is an easy recipe to make on the grill. The recipe does call for marinating the chicken for 4-24 hours as well as slow cooking it on the grill.

Ingredients:
3.5 – 4 lb. whole chicken, spatchcocked
1 bunch cilantro, tough stems trimmed
1 small onion, coarsely chopped
4 garlic cloves
1 habanero chili, stem removed
1/2 cup fresh orange juice
1/2 cup fresh lime juice
1.5 tablespoons paprika
1 tablespoon white vinegar
3/4 teaspoon dried oregano
1/4 teaspoon cumin
1 3/4 teaspoons kosher salt
Lemon wedges for serving
Directions:
1. In a food processor puree cilantro, onion, garlic, habanero, orange juice, lime juice, paprika, white vinegar, oregano, cumin and salt.
2. Place chicken in a large freezer bag, add the puree and combine well.
3. Place the chicken in the refrigerator and marinade for 4 to 24 hours.
4. Preheat grill to 350-400F.
5. Grill over low heat for 45-55-minutes or until a temperature of 165F is reached in the thickest part of the breast, or 180F in the thigh.
6. Let the chicken rest for 10-minutes before carving.
7. Squeeze lemon wedges over chicken and serve.

Pinot Grigio Wine
This Grilled Pollo Asado recipe has nice flavors from the marinade that I would pair with a Pinot Grigio. The lime and lemon notes of the wine would pair well with the light citrus and spice flavors of the chicken. A Pinot Grigio is also a medium to full-bodied wine, with a rather low acidity and fairly neutral aromas.
