Grilled Whole Eggplant Recipe
This Grilled Whole Eggplant recipe produces a skin that is charred with soft and creamy flesh. To serve, cut in half and top the flesh with seasoning, or just scoop it out and add it other dishes.

Ingredients:
1 large eggplant
Extra-virgin olive oil
Kosher salt
Directions:
1. Set your gas grill to medium-high heat.
2. Coat eggplant with olive oil and sprinkle with salt.
3. Grill eggplant over medium-high heat for 7 minutes per side (14-minutes total).
4. Lower the heat to low and cook around 400F for an additional 11 minutes per side (22-minutes total).
5. The eggplant should be collapsed and very soft.
