Hatch Chile Corn Salad Recipe
Our Hatch Chile Corn Salad recipe is an easy recipe to make which utilizes Hatch Chilies. Hatch Chile season occurs during August and September, so this salad goes great with most grilled meats.

Ingredients:
4 ears fresh corn, shucked
1 Hatch Chile pepper
1/3 cup crumbled goat cheese
1 tablespoon lime juice
salt and ground black pepper to taste
Directions:
1. Preheat grill for medium heat.
2. Cook corn and Hatch Chile until corn is charred and Chile blisters (around 20-minutes).
3. Peel skin off of pepper.
4. In a large bowl, cut the corn off of the cob.
5. Stir in chopped Chile pepper, goat cheese, lime juice, salt and pepper.
