Htipiti Recipe

Htipiti is a traditional Greek dip that features feta and roasted peppers. Our variation is a nouveau style which adds some heat to a traditionally flavorful meze. You can downgrade or omit the peppers if you are sensitive to spicy dishes.

Ingredients:

1 bell pepper
1-2 fresh green chilies (jalapeno)
7 oz. Feta Cheese, cubed
4 tablespoons extra virgin olive oil
1 lemon, juiced
3-4 tablespoons milk
Freshly ground black pepper
Finely chopped fresh flat leaf parsley to garnish
Slices of bread, baguettes or toasted pita bread to serve

Directions:

1. Roast the bell pepper and green chilies over an open flame.
2. Once the skin is charred all over, set aside until they are cool enough to handle and peel.
3. Slit the peppers and discard the stem and seeds.
4. Place peppers into a food processor.
5. Add the feta cheese, olive oil, lemon juice and milk and blend well.
6. If the mixture is stiff add some more milk and season with salt and pepper.
7. Spread the dip over the bread, sprinkle with fresh parsley and serve.
