
Instant Pot Spaghetti Sauce Recipe
Our Instant Pot Spaghetti Sauce recipe is a meatless tomato sauce that is made with fresh tomatoes. The best tomatoes to use for tomato sauces are typically San Marzano tomatoes; but if you can’t find those any sweet tasting tomato that is meatier with fewer seeds will do.

Ingredients:
2 pounds fresh tomatoes, quartered
2 small yellow onions, quartered
2 large carrots, peeled and cut into chunks
2 whole cloves garlic, peeled
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon kosher salt
6 ounces tomato paste
3/4 teaspoon sugar
Directions:
1. Add tomatoes, onion, carrots, and garlic to Instant Pot.
2. Sprinkle oregano, basil, and salt over the top of the vegetables.
3. Secure the lid and move the steam release valve to Sealing.
4. Pressure cook on high pressure for 20-minutes.
5. Once done, allow the pressure to naturally release for 10-minutes.
6. Move the steam release valve to Vent to release any remaining pressure.
7. When the floating valve drops, it’s safe to remove the lid.
8. Use an immersion blender to blend the cooked vegetables into a smooth sauce. If you do not have an immersion blender, you can transfer the vegetables to a countertop blender.
9. Add in the tomato paste and sugar and blend again to make sure it’s fully incorporated.
10. Adjust seasoning if needed.
