Heirloom Tomato Sauce Recipe

Our Heirloom Tomato Sauce Recipe is light and different from most red sauces. The heirloom tomatoes actually sweeten the sauce, giving it a light fresh flavor.

Ingredients:

6 tablespoons extra virgin olive oil
1 medium yellow onion, diced
1 medium carrot, peeled and diced
Sea salt and fresh cracked pepper to taste
Hot Pepper flakes to taste (optional)
6 cloves garlic, chopped
4 pounds ripe, fragrant heirloom tomatoes, cored and cut into 1/2-inch wedges
1/4 cup chopped parsley
Fresh basil leaves
Sugar

Directions:

1. Heat a large Dutch oven or heavy bottomed saucepan over medium heat.
2. Add 3 tablespoons of olive oil, and heat until shimmering.
3. Add the onion and carrot and season with a pinch of salt and red pepper flakes.
4. Cover and gently cook, stirring occasionally, until the vegetables are tender (10 minutes).
5. Add the garlic and cook for 1 minute.
6. Add the tomatoes and stir to combine.
7. Cover again and cook, stirring occasionally, until the tomatoes are very juicy, (10-15 minutes).
8. Uncover and continue to cook over medium heat, stirring occasionally for 30 minutes.
9. Add the parsley and cook 5 minutes more.
10. Stir in remaining olive oil and basil.
11. Adjust seasoning with salt and pepper and add a pinch of sugar.
12. Continue to cook the sauce down until it reaches your desired consistency.
