Lemon Parmesan Chicken Recipe

This Lemon Parmesan Chicken recipe combines a thinly pounded chicken breast that is breaded and pan-fried. The chicken is topped with arugula and shaved parmesan. It’s a relatively easy recipe to prepare with big taste!

Ingredients:

1 cup all-purpose flour
Kosher salt
Freshly ground pepper
4 large eggs
2 teaspoons water
1.5 cups seasoned dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 teaspoon lemon zest
1 teaspoon fresh chopped thyme leaves
6 boneless, skinless chicken breasts
Unsalted butter
Olive oil
5 oz. arugula
1/4 cup freshly squeezed lemon juice (approximately 1.5-2 lemons)
1/4 pound chunk Parmesan cheese; or store bought shaved Parmesan

Directions:

1. Combine flour, 1 teaspoon salt and 1/2 teaspoon pepper in large bowl.
2. In a second bowl, beat the eggs with 2 teaspoons of water.
3. In a third bowl, combine the bread crumbs, freshly grated Parmesan, lemon zest and thyme.
4. Pound the chicken breasts until they are 1/4″ thick.
5. Coat the chicken on both sides in flour mixture, dip in egg mixture coating both sides then dredge both sides in bread crumb mixture.
6. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan.
7. Cook 2 to 3 chicken breasts over medium low heat, 2 to 3 minutes per side, until cooked through. (Add more butter and olive oil if pan dries out.)
8. Place the arugula in a large bowl.
9. In a separate bowl, whisk 1/4 cup lemon juice, 1/2 cup olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper.
10. Pour mixture over arugula (just enough to moisten it) then toss salad.
11. To plate, pile some arugula on each chicken breast and top with shaved Parmesan.
